Recipes

Here's a recipe for Toad in the Hole that serves four:

Ingredients:

  • 8 pork sausages
  • 150g plain flour
  • 2 large eggs
  • 175ml milk
  • 1 tsp mustard
  • 1 tbsp chopped fresh thyme leaves
  • Salt and pepper
  • 2 tbsp vegetable oil

For the onion gravy:

  • 1 large onion, thinly sliced
  • 1 tbsp vegetable oil
  • 1 tbsp plain flour
  • 300ml beef stock

Instructions:

  1. Preheat the oven to 220°C/200°C fan/gas mark 7.

  2. To make the batter, sift the flour into a large bowl and make a well in the center. Crack the eggs into the well and whisk them together with a fork, gradually incorporating the flour as you go. Slowly add the milk, whisking constantly, until the batter is smooth. Stir in the mustard, thyme, and a pinch of salt and pepper.

  3. Heat the vegetable oil in a large frying pan over medium-high heat. Add the sausages and cook them until browned on all sides, about 8-10 minutes. Remove the sausages from the pan and set them aside.

  4. Pour the batter into the frying pan, then add the sausages to the batter. Place the pan in the oven and bake for 25-30 minutes, or until the batter is risen and golden brown.

  5. While the Toad in the Hole is cooking, make the onion gravy. Heat the vegetable oil in a saucepan over medium heat, then add the sliced onion and cook until softened, about 10 minutes. Sprinkle the flour over the onions and stir to combine. Gradually add the beef stock, stirring constantly, and bring to a simmer. Cook for a few minutes until the gravy has thickened.

  6. Serve the Toad in the Hole hot from the oven with the onion gravy and your choice of vegetables. Enjoy!
